Creative Direction, Editing, and Photography by Qe to Hare
Since 2021, Kyoto University has conducted the ongoing fieldwork project Sustainable Gastronomy. For the third volume of its research archive (2023 edition), Qe to Hare was entrusted with the creative direction, editorial design, and photography under the theme “Returning to the Soil.”
Expanding its scope from diverse regions across Japan to fields in Europe, this edition explores the cyclical interrelations among land and people, food and environment, culture and economy. Through in-depth dialogues with entrepreneurs and practitioners, the book investigates how gastronomy can serve as a medium to illuminate these multilayered connections.
In this context, “gastronomy” transcends the realm of culinary culture. It encompasses the understanding of soil, water, and climate—terroir—and extends to agriculture, enterprise, cultural memory, and ethical perspectives.
Through the familiar entry point of “food,” this volume invites readers to reframe sustainability on a larger scale, rethinking the interwoven relationship between land and humanity.
